In this study, we isolated camel milk peptides (CMPs) through a gastrointestinal digestion simulation and ultrafiltration process using well-established laboratory techniques. The resulting CMPs were made up of small peptides with a molecular weight below 3 kDa and demonstrated an outstanding DPP-IV inhibition rate of 82.52±1.43%. Further analysis through LC-MS/MS identified a total of 830 peptides within the CMPs, out of which 34 exhibited potential DPP-IV inhibitory properties such as FAVHR, IPALL, LASLY and others (refer to Table S1).
